3 tablespoons olive oil
2.5 liters of water
1 tablespoon fresh coriander (chopped)
1 tablespoon celery (chopped)
½ teaspoon ghee (optional)

- In a pot over low heat, sauté the chopped onion in the olive oil for 3 minutes.
- Add the grated tomatoes, tomato paste, chickpeas, carrots, spices, and water.
- Cover the pot and let the mixture simmer until the chickpeas are soft.

- Continue simmering on low heat, stirring occasionally, for 12 to 15 minutes.
