1 onion (chopped)
2 garlic cloves (chopped)
1 peeled tomato (seeded and chopped)
1 bunch fresh coriander and parsley
80 ml olive oil
1 teaspoon ginger

Water (enough to cover the meat)
- For the Vegetables:
1 kg zucchini (green squash)
1 red bell pepper
1 tablespoon chopped coriander
1 garlic clove (chopped)
Directions
- In a pot over low heat, place the lamb pieces, chopped onion, olive oil, chopped garlic, and the peeled and seeded tomato (chopped into small cubes).
- Stir and sauté until the onion becomes transparent.
- Add the spices (ginger, turmeric), salt, the bunch of coriander and parsley, and enough water to cover the meat. Let the lamb cook until it becomes tender and juicy.
- Roast the red pepper, place it in a plastic bag, and let it rest for 10 minutes. Then peel, remove the seeds, and cut it into long strips.
- Wash the zucchini (green squash) and trim both ends.
- Once the lamb is cooked, remove it from the pot and keep it warm.
- Add the zucchini to the broth and cook over low heat for 15 minutes until the zucchini is tender and the broth thickens.
- Ten minutes before removing the pot from the heat, add the sliced red pepper, chopped coriander, and chopped garlic.
- Heat the lamb and arrange it on a serving platter. Garnish with the zucchini and red pepper, then pour the broth over the top.
- Serve the dish hot.
