Ingredients

  • 2 (14 oz) cans fava beans

  • 1 (15 oz) can chickpeas

  • 1 teaspoon cumin

  • ½ teaspoon kosher salt

  • Sauce for Topping:
  • ½ cup extra virgin olive oil

  • ¼ cup lemon juice

  • ½ cup chopped parsley

  • 4 garlic cloves, crushed

  • 1 tablespoon chopped jalapeños

  • Salt and pepper to taste

Directions

  • Prepare the Beans: Drain and rinse the fava beans and chickpeas in cold water using a colander.
    Transfer the beans to a medium saucepan and add 1½ cups cold water, cumin, and kosher salt.
    Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 20 minutes, stirring occasionally. Use the back of a wooden spoon to smash the beans until you reach your desired consistency.
  • Make the Sauce: While the beans are simmering, prepare the sauce by combining olive oil, lemon juice, chopped parsley, crushed garlic, chopped jalapeños, salt, and pepper in a small bowl. Stir well.
  • Combine and Serve: Once the beans are done, you can either stir half of the sauce into the beans or serve the sauce on top of the ful medames. Reserve the other half for serving on the side.
  • Garnish and Serve: Garnish with fresh parsley. Serve alongside warm pita, tomatoes, and radishes for a complete meal.
