  • For the Coating:
  • ½ cup melted butter

  • ¼ cup granulated sugar

  • ¼ cup brown sugar

  • ½ teaspoon ground cinnamon

Directions

  • Preheat oven to 350°F (175°C). Grease a light-colored 9×5-inch loaf pan with non-stick spray.
  • In a large bowl, cream together oil, butter, and sugar until smooth. Add eggs and vanilla, mixing until fully incorporated.
  • Add the flour, baking powder, and salt. Alternate with buttermilk, mixing until the batter is smooth and uniform.
  • In a small bowl, combine ½ cup of the batter with cinnamon and molasses to create the swirl mixture.
  • Assemble the loaf:
    – Pour half of the plain batter into the loaf pan.
    – Drop spoonfuls of half the cinnamon batter over it.
    – Repeat with remaining plain and cinnamon batter.
    – Use a knife to gently swirl the batters together.
  • Bake for 45–50 minutes, or until a toothpick comes out with a few moist crumbs.
  • Let the loaf cool in the pan for 10 minutes, then carefully remove it.
  • While still warm, dip the entire loaf into the melted butter, coating all sides.
  • Press the buttery loaf into the cinnamon-sugar mixture until fully coated.
