Ingredients

  • For the Crust:
  • 1 3/4 cups graham cracker crumbs (about 14 whole crackers)

  • 1 Tbsp granulated sugar

  • 8 Tbsp unsalted butter, melted

  • For the Cheesecake Filling:
  • 16 oz cream cheese (2, 8-ounce blocks), softened to room temperature

  • 2/3 cup granulated sugar

  • 2 Tbsp sour cream

  • 2 Tbsp freshly squeezed lemon juice

  • 1 cup heavy whipping cream

  • For the Blueberry Topping:
  • 1/3 cup water (or 1/4 cup for frozen blueberries)

  • 1 Tbsp freshly squeezed lemon juice

  • 2 Tbsp granulated sugar

  • 1 Tbsp cornstarch

  • 4 cups fresh or frozen blueberries (about 16-18 oz)

Directions

  • 1. Prepare the Blueberry Topping:
    – In a medium saucepan, combine water, lemon juice, sugar, and cornstarch. Stir until the cornstarch dissolves. Place the pan over medium heat and cook the mixture, stirring occasionally, for about 1 minute until it thickens.
    – Add the blueberries to the pan and bring the mixture to a boil, stirring gently. Let the mixture cook for 5-6 minutes until the blueberries burst and release their juices, forming a syrupy consistency. Remove from heat and let the topping cool to room temperature.
  • Prepare the Cheesecake Crust:
    – Use a food processor to crush the graham crackers into fine crumbs. In a bowl, combine the crumbs with granulated sugar and melted butter, stirring until the crumbs are well coated.
    – Line a 9-inch round springform pan with parchment paper. Press the graham cracker mixture into the bottom of the pan, making sure to gently press it up the sides about 1/2 inch.
    – Freeze for 15 minutes or refrigerate for 30 minutes to set the crust.
  • Make the Cheesecake Filling:
    – In a large mixing bowl, beat the cream cheese and granulated sugar with an electric hand mixer on medium-high speed for about 3 minutes, until smooth and fluffy. Scrape the sides of the bowl as needed.
    – Add the sour cream and lemon juice, beating for another minute until fully incorporated.
    – In a separate bowl, beat the heavy whipping cream on medium-high speed until stiff peaks form, which should take about 3 minutes.
    – Gently fold the whipped cream into the cream cheese mixture using a spatula, mixing until well combined.
  • Assemble the Cheesecake:
    – Pour half of the cheesecake filling over the prepared graham cracker crust.
    – Spoon 1/4 of the cooled blueberry topping over the cream cheese layer and lightly swirl it into the filling.
    – Pour the remaining cheesecake mixture over the first layer and smooth out the surface.
    – Spoon and swirl the remaining blueberry topping on top of the second layer.
  • Chill and Serve:
    – Cover the cheesecake and refrigerate for 6 hours or, ideally, overnight to allow it to set properly.
    – Before serving, top individual slices with the remaining blueberry sauce for an extra burst of flavor.

Notes

  • Use Room Temperature Cream Cheese:
It’s essential that the cream cheese is at room temperature to avoid lumps in the filling. This ensures a smooth and creamy texture when mixed with the other ingredients.
  • Whip the Heavy Cream to Stiff Peaks:
Be sure to whip the heavy cream until stiff peaks form to add a light, airy texture to the cheesecake. This helps balance the rich cream cheese filling.
  • Let the Cheesecake Set:
Although the cheesecake is no-bake, it needs time in the refrigerator to fully set. It’s best to refrigerate it for at least 6 hours, or overnight for a firmer consistency.

This No-Bake Blueberry Cheesecake is the perfect dessert to impress your guests while keeping your kitchen cool. With its creamy filling, sweet blueberry topping, and buttery graham cracker crust, it offers a delightful blend of textures and flavors. Not only is it incredibly easy to make, but it also offers flexibility for customization, such as using other fruits or flavoring the crust with a hint of cinnamon.
